Ayurvedic Winter Soup for Cleansing: Detox Dal

With winter being very harsh it has made the urban environment worse. Just a month into the New Year, many find themselves pushing towards their New Year goals and aspirations.

Winter is generally associated with digestive problems. While we crave for food, especially non-vegetarian and spicy ones, we also tend to find it difficult to digest it.

Here’s an Ayurvedic winter soup which as you expect is both tasty and acts as a cleansing agent. Also, it is easy to prepare with minimal ingredients available in the kitchen. All you need for this is split moong dal, carrots, and chard.

Ingredients for Detox Dal:

1 tbsp ghee (you can use more if you wish)

1 onion

2 cloves garlic, chopped finely

1 tbsp vata spice mixture (you can get if from your nearby Ayurvedic store)

1 inch ginger (you can use ginger powder too)

1 tsp curry powder

1 cup split mung beans, rinsed and drained

4 cups of vegetable broth

2 bay leaves

4 medium sized carrots, cut into bite-sized pieces as you wish

1 bunch chard, rinsed and loosely chop it

1 cup water

Seasoning: extra virgin olive oil, fresh cracked black pepper

How to prepare detox dal :

Add a tablespoon of ghee into a pan.

Once it melts, add onions, ginger and garlic and give it a swirl over a medium flame.

Once the onion sweats add the spices and swirl again, now for about a minute.

Stir in the mung beans. At this stage turn the heat to high and slowly pour in the vegetable broth.

Add 2 bay leaves and bring it to a boil, cover it and reduce the heat.

Let it boil gently boil for about 25 minutes. Now add carrots stir and check your liquid levels and adjust consistency by adding water as per your wish.

Cook for another 15 minutes then add the loosely chopped chard. Let it sit on top of the soup to steam. Cook until the chard wilts, about 5-10 minutes. Stir the chard into the soup and pick a piece a carrot to check if its cooked well. Carrots will be smooth and soft if they are cooked and that is when you need to remove the bay leaves, give a stir and pour the detox dal into bowl.

Season it with pepper powder and serve it hot.
